Quick and easy prepared, delicious and refreshing. Perfect for hot summer days. Made it last weekend and it was a culinary delight. Raisins are not shown in this picture 'cause I don't like them :-P

Ingredients:
1 lbs carrots, peeled
1 lbs apples (e.g. Pink Lady)
1/2 cup raisins
1/2 cup plain greek yogurt
2 tbsp lemon juice
2 tbsp sugar (or salt and pepper)
Directions:
1. Wash carrots and apples.
2. Peel carrots and cut off their ends. Cut apples into quaters.
3. Coarsely grate carrots and apples (or dice them) while using a large mixing bowl.
4. Add lemon juice (for the browning) and sugar (for more sweetness)
along with the raisins and the greek yogurt if desired. Mix everything
together. If you wish it more piquant, season to taste with salt and
pepper.
Tip: Instead of the raisins you can also use walnuts or dried cranberries. Enjoy!
